Impossible Pumpkin Pie

Thanks be to Taste of Home! I have tried not to turn my blog into a cliche, but I'm so excited about this recipe, that I just can't help but share it! This is a crustless pie so you don't have to worry about making a crust or buying one. It took me an hour to make this:


Ingredients:
-2 Eggs
-1 Can (12oz) evaporated milk
-1 Can (15oz) solid-pack pumpkin
-3/4 Cup Sugar
-1/2 Cup biscuit/baking mix
-2 Tblsp. Butter (melted)
-2 1/2 teasp. All-spice (or pumpkin pie spice)
-2 teasp. vanilla extract

Throw it all in blender and process until smooth. Then dump it in a greased pie plate. Bake at 350 for 50-55 min. Store in refrigerator.

Also, Impossible Pumpkin Pie makes a great band name.

  1. I never really understood that phrase "I'm turning into my mother." For one thing, my mom is pretty cool. But more importantly, I didn't understand how "growing up" would suddenly make anyone interested in the domestic things mothers in general seem to be into.

    But then I started to grow up.

    And we're into recipes. And teapots. And couch covers.

    And I don't regret a thing.

  2. Ok I'm making it today for our Christmas dinner.....I almost left out the butter....but I found it at the last minute...I'll let you know how it goes....
